In 2003, France-native Antoine Elie began making and selling crepes at farmer’s markets throughout Chicago. Using his grandmother’s crepe recipe as a base, Antoine enhanced the recipe with healthy ingredients such as wheat flour, buckwheat and wheat germ, while also looking for opportunities to bring his crepes to market year-round.
